[codex] Add MinerU compose service

Summary

• Add explicit LightRAG-prefixed container names to the full compose stack.
• Add a MinerU API service profile and wire LightRAG PDF parsing to MinerU OCR.
• Expose configurable host ports for Postgres, MinIO, and MinerU to avoid local port conflicts.
• Add no-proxy settings for internal service-to-service traffic.

Validation

• docker compose -f docker-compose-full.yml --profile mineru config --quiet
• Built and started local mineru:latest image.
• Verified LightRAG-mineru-api /health through host port 18000 and from the LightRAG container.
• Recreated LightRAG-lightrag and verified /health shows the MinerU parser routing.
