Update the Apache APISIX service entry

Description

This updates the existing Apache APISIX service entry with a current, neutral description and official documentation links for its GraphQL-focused plugins:

• graphql-limit-count applies fixed-window rate limits using GraphQL query AST depth as the request cost.
• graphql-proxy-cache caches GraphQL query responses on disk or in memory and bypasses mutation operations.
• degraphql maps regular HTTP requests to configured GraphQL queries.

The project URL, GitHub repository, and existing classification tags are unchanged.

Validation

• pnpm run lint
• pnpm run build
• Verified the rendered Apache APISIX card and all three plugin documentation links.
