docs(readme): correct project status for live L4 evidence - #61

Replace the outdated "no production evidence" banner. State pre-1.0 API instability, first-party production L4 on xid.dev, and that external IdP/SaaS/social/SMS paths stay non-production-supported until L4 rows exist.
