Adds three post-release roadmap documents after the DigiEmu Core 2.0 release.

This keeps Core 2.0 as the enterprise foundation while ensuring Core 3.0 emerges from partner feedback, external review, enterprise requirements, and real integration evidence.
Core principle:
Core 2.0 is the enterprise foundation. Core 3.0 should emerge from evidence, not ambition.
