docs(config): document the five unlisted env keys - #155

RATE_LIMIT_UPLOAD_* and the three ABOUT_ contact-copy keys were readable but absent from .env.example, so an operator had no way to discover them.

RATE_LIMIT_UPLOAD_REQUESTS/_WINDOWand the threeABOUT_contact-copy keys are read by config but never appeared in.env.example, so the only way to find them was readingconfig.go. Every key config reads is now listed, and every key listed is read.
