Update all monorepo apps to track their respective version number with env vars

The goal of this issue is to allow all apps we currently have:

• ENSAdmin
• ENSIndexer
• ENSRainbow
  to be aware of which version of the code is running in their runtime.

Currently, we'd read the version field from the package.json file from a given app directory. However, this version field changes only when we complete a GitHub Release.

The code keeps changing more often, so we need to track a reference to the current code version. We can achieve that by, for example, tracking git commit SHA with an environment variable. We can easily embed such value into a Docker image, so when application container is created, the value can be easily accessed.

I like the idea of also including the commit hash of each app's build into the overall set of version info we pass around. Let's not remove the use of version numbers from package.json files.

Can we achieve the goal of tracking commit hash without introducing any environment variables? Prefer if this can be achieved without any use of environment variables.

The existing version numbers are good to keep for humans. No one intuitively understands a commit hash. Both a version number and commit hash complement each other for different purposes.

Maybe there's some strategy here where after we make a (full, non release candidate) release, our scripts will automatically increment the patch version number of all apps and packages proactively.

In other words, imagine we just made a release of version A.B.C. As part of that operation, imagine that we automatically bumped all version numbers on the main branch to version A.B.(C + 1). Therefore, the only place where version A.B.C. will exist on the main branch is for the single commit where the release of A.B.C. was being generated.
